Global Knives were introduced to the market by Komin Yamada, a legendary Japanese product designer. He was given a brief to create a range of knives that were truly innovative and different, using the best available manufacturing methods and machinery with the latest stainless steel materials. He created a series of kitchen knives which brought the art of Japanese knife making to Western consumers and chefs. Global Knives use their proprietary steel, Chromova18 in all their knives, a high carbon steel with molybdenum and vanadium mix achieving a hardness rating of 56-58 HRC. This offers knives that are able to hold a edge for a long time whilst being easy to resharpen. Global uniquely uses covex edges on their blade edges. These edges wear less much more slowly than flat grinds and is the real reason why Global knives stay sharp for an exceptionally long time.

The GSF range is made up of smaller, but strong, fully forged knives with solid handles. The Global Small Forge Range knives are made from one piece of steel and have small blades. SAI knives feature a 3 ply stainless steel blade, with a core of ultra-hard Cromova18 stainless steel with two outer layers of 18/10 steel for added strength and corrosion resistance. Each blade has an individually hammered pattern design on the blades. The seven dots on the handles are designed to represent the seven noble virtues of the Samurai’s code of honour; Integrity, Courage, Compassion, Respect, Honesty, Honour and Loyalty.
Global Ni are the second in the new generation of Global Knives (Ni meaning 2). These knives have all you would expect of the Global range; razor sharp edges, Chromova18 stainless steel and Global's famous perfectly weighted hollow handles. What set the Global Ni apart are the improvements to the original series. Thicker blades with slightly longer handles and a spine that has been slightly rounded to provide control and comfort using a pinch grip.
The name 'UKON' has many positive connotations in Japanese legend. UKON knives are subject to even more precise grinding and finishing work, making them 10 percent sharper out of the box. The knives are designed with an ambidextrous thumb rest that sits closer to the blade for added control and efficiency. The underside of the handle features GLOBAL's trademark indentations, making UKON knives extremely comfortable to hold.
